Through technical process and research-driven cooking, the brutalist menu explores the intersection of sustainability and global food pathways - highlighting ingredients at their peak through thoughtful extraction, transformation, and full utilization. BRUTØ is located in the Downtown Denver Free Market. We have our own entrance off of 18th street, however you are welcome to enter through Free Market’s main entrance. We are open Tuesday, Wednesday, Thursday, and Sunday from 5:30 PM - 8:30 PM and Friday, Saturday from 5:00 PM - 8:30 PM.
